Cumberland Sausage Tray Bake Recipe

An easy one-tin Cumberland sausage tray bake with a sticky honey and mustard glaze: ingredients, method and timings from our butchers.

A tray bake is about as easy as midweek cooking gets: everything in one tin, minimal washing up, and sausages that turn sweet and sticky in the oven. Our Cumberland sausages are made with proper seasoning, so they carry the whole dish.

Cooking the sausages on top of the potatoes lets the fat and juices drip down and flavour everything underneath. The honey and mustard glaze goes on for the last 15 minutes so it coats rather than burns.

Ingredients

  • 8 to 10 Cumberland sausages (about half an 18 pack)
  • 750g potatoes, cut into chunks
  • 2 peppers, sliced
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tbsp wholegrain mustard
  • 1 tbsp runny honey
  • Salt and freshly ground black pepper

Method

  1. Heat the oven to 200C (180C fan). Boil the potato chunks for 8 minutes, then drain and let them steam dry.
  2. Tip the potatoes, peppers and onion into a large roasting tin, drizzle with the oil, season and toss together.
  3. Nestle the sausages on top and roast for 30 minutes.
  4. Mix the mustard and honey, brush over the sausages and vegetables, then return to the oven for another 15 minutes until sticky and cooked through.
  5. Check the sausages are steaming hot throughout with no pink meat, then serve straight from the tin.
Storage and reheating: Cool leftovers within two hours, keep them in the fridge and eat within two days. Reheat until piping hot throughout.
