Good meat costs too much to bin, and honestly, some of the best meals of the week come from what is left of Sunday’s roast. Here are five ideas our customers, and our own families, keep coming back to.
1. Leftover Roast Chicken Pie
Strip the carcass, fold the meat through a quick white sauce with peas, top with pastry and bake until golden. Shortcut pastry keeps it quick on a weeknight.
2. Roast Beef Hash
Fry diced potatoes until crisp, add chopped leftover beef and onion and press everything down so the base crisps. Top with a fried egg for a breakfast that beats cereal.
3. Lamb Curry
Leftover lamb was made for curry. Our Meah’s curry sauces make it a 15 minute job: heat the sauce, add the sliced lamb and simmer gently until piping hot.
4. Pork Fried Rice
Cold rice, diced leftover pork, egg, peas and soy sauce, five minutes in a hot pan. Cooked pork must be reheated until steaming hot throughout.
5. Bubble and Squeak
Mash leftover veg with a little butter, shape into patties and fry until crisp on both sides. Serve with a fried egg or the last slices of any roast.
Storing Leftovers Safely
- Cool leftovers within two hours of serving.
- Keep them in the fridge and use within two days.
- Reheat once, until steaming hot throughout.
